Description
Maestro Sierra Amontillado 12 years is a unique wine that combines two types of ageing: biological and oxidative. Made from 100% Palomino grapes, this Jerez wine follows the traditional system of soleras and criaderas, where during the first six years it is aged under the veil of flor, a process that gives the wine sharp notes and a dry palate. Subsequently, the wine is topped up to 17% alcohol, which initiates oxidative ageing, which lasts for more than six years, generating a more complex profile. Fermentation takes place in 500-litre American oak barrels, and the wine is bottled unfiltered to preserve all its essence. The El Maestro Sierra winery, located in Jerez, benefits from the albariza soils and Mediterranean climate, which allow the vines to develop in optimal conditions.
Taste
Maestro Sierra Amontillado 12 years is characterised by a dry and warm taste, with a robust and well-balanced body. Flavours of toasted almonds, hazelnuts and a hint of caramel stand out, combined with fresher notes of dried apple and oxidative nuances. On the nose, intense and complex aromas are perceived, ranging from dried fruits to saline and woody notes. The finish is long and persistent, with an elegance that makes it ideal to accompany dishes such as smoked salads, mushrooms or even white meats.
This wine is a jewel of sherry, whose meticulous ageing and aromatic profile make it an excellent choice for lovers of fortified wines with a unique character.
