The second vintage of the white wine produced here is the 2019 El Hombre Bala Albillo Real, a wine that wants to show a different side of the grape from the village of Cadalso de los Vidrios. It's unctuous but coupled with citrus sensations;, and it's close to 14 alcohol but has a very low pH of 3.18 and good acidity with six grams of tartaric acid per liter. 2019 was a Mediterranean vintage marked by a very dry spring and summer but with a lot of rain during the harvest. But the main event of the year was the big fire in Cadalso in late June. This wine was produced with the grapes from three separate plots in the village, which have different orientations, all around 60 years old on poor granite soils of sandy texture that are organically farmed. It fermented in French oak barrels without malolactic and matured there with the lees for six months. It has some citrus notes, a characteristic of the Albillo grapes from Cadalso, as the grapes from San Martin tend to be more fruit-driven. This is fresh, has moderate volume and feels narrower than the one from 2018. It has a balanced and serious palate, when the balance is usually reached at 13% alcohol (you notice the ripeness when it's more than 13.5%). It's soil-driven and tasty. The grapes were picked in early August. 4,687 bottles produced. It was bottled in May 2020.
