The 2019 Mataborricos was one of only a handful of 2019s already bottled when I tasted the whole range of 2018s and 2019s in November 2020. This is the red they produce with the rest of the autochthonous grapes that are interplanted with Garnacha in the old vineyards (Listán Prieto, Morate, Vidadillo and others, including whites this year), varieties that almost disappeared. To keep with the tradition of the zone, this ferments in clay tinaja with indigenous yeasts and matured in those same tinajas for 10 months. This used to be rustic and a bit wild, but in 2019 they adapted the vinification, doing a shorter maceration. As a result, the wine is paler and smells like a white, with even some apple notes, and is floral, a lot more subtle and less ripe. Despite the warmer year, this is more precise, has more light and is fresher than the 2018. This is now the style they want for this wine, more precise and fine, the style they are doing with the 2020, more of a clarete than a red. Only 863 bottles were filled in August 2020.
