Description
Bonnet Ponson Seconde Nature Rosé de Macération 1er Cru is a rosé champagne with maceration made exclusively with Pinot Noir under the appellation champagne by the Bonnet-Ponson winery.
The grapes come from plots in the terroirs of Chamery, a village classified as Premier crue in the Montagne de Reims.
The soil where the vineyard was planted consists of calcareous clay interspersed with limestone boulders and the subsoil of sands and fossil shells.
Winemaking
After manual harvesting, the grapes are macerated for 48 hours before pressing. The first fermentation is carried out with indigenous yeasts in earthenware vats and amphorae for 9 months.
The second fermentation takes place in the bottle and is aged for a minimum of 24 months. This Champagne is entirely made without sulphites or additives and is unfiltered.

Bonnet Ponson Seconde Nature Rosé de Macération 1er Cru is an intense champagne with fruity and floral aromas. The palate reflects the notes of fine spices, contains tannins and is fresh and mineral.
A creamy and mature champagne
This champagne is superb and reflects the character of the northern terroirs of the Montagne de Reims. It is perfect for immediate drinking or cellaring if desired.
Gastronomically, it is perfect for gifts, dinners with friends and is intended to accompany food such as Iberian cured meats, stuffed pheasant breast, rice dishes with meat, stews and casseroles.
