The red 2024 Bimbache Tinto is a blend of the main red grapes grown on the island—Listán Negro, Verijadiego Negro and Baboso Negro—with all the plots and grapes picked on the same day. It fermented with 10% full clusters and matured in stainless steel with the lees for nine months. It has a pungent nose of smoky bacon and boiled ham and is a little more reductive, with a bright ruby color that is deeper than the Chivo. It has a core of pumice stone, dry flowers and black pepper. In 2024, they harvested earlier, and the wines have less ripeness. This comes in at 12% alcohol, with a pH of 3.33 and 6.7 grams of acidity, with a medium-bodied palate and very fine tannins. There's more precision and freshness in these 2024s. 800 bottles were filled unfined and unfiltered in June 2025.

Description
Bimbache Tinto is a wine that comes from the sunny and semi-arid southern part of El Hierro. This region is characterised by its mixed soils of volcanic sands, ashes and clay. These traditionally planted vineyards are home to probably dozens of varieties that end up in the blend. However, the majority is Listán Negro, complemented by small amounts of Vijariego Negro and Listán Prieto.
Winemaking
Fermentation is carried out with indigenous yeasts in stainless steel tanks with no temperature control and a maceration of two weeks. The wine then rests in stainless steel for 12 months and is bottled without fining or filtering.
Taste
Bimbache Tinto has a raw style, with aromas that evoke the character of the island, particularly its volcanic soils(sulphur and cider), as well as red fruits and pepper. On the palate, it is perceived as an elegant and biting wine, with beautiful acids that bring refinement.
