Description
Amaury Beaufort Chablis is a white wine made exclusively from the Chardonnay grape variety. This wine is produced in the Chablis region of Burgundy, France. Amaury Beaufort, a descendant of a Champagne winemaking family, decided to venture into the production of his first Chablis in 2020 after experiencing minor losses in Champagne.
Winemaking
The fruit is sourced from friends at Domaine Dauvissat and aged in old Champagne barrels, with winemaking involving alcoholic fermentation in barrel with indigenous yeasts and spontaneous malolactic fermentation. Ageing is carried out for 12 months in old barrels working the fine lees, which contributes to its unique mineral profile. This approach to winemaking, which includes the use of oxygen and careful handling, places the style of this Chablis somewhere between the wines of the Jura and the Coteaux Champenoise.
Amaury Beaufort comes from a family with a rich winemaking tradition. His father, André Beaufort, is known in the villages of Ambonnay and Polisy for his work in organic vineyards. Amaury's grandfather, Jacques Beaufort, was a pioneer in organic farming since 1971. Following this heritage, Amaury has adopted biodynamic and natural practices in his vineyards, ensuring a sustainable and environmentally friendly approach.
Taste
Amaury Beaufort Chablis is distinguished by its brilliantly mineral character with nutty nuances. On tasting, there are notes of citrus, chalk and smoke, with a medium-high acidity that makes it refreshing and lively. Although young and with some nerve, we recommend decanting or leaving it to age in bottle for 2-3 years for it to fully develop its complexity. This wine shows restrained richness and is an excellent example of the typicity of the Chablis terroir, differentiating it from other more conventional Chablis by its natural approach and biodynamic production, making it an ideal choice to accompany seafood, oysters and sashimi.
