Description
In the highest areas of O Rosal, where the Atlantic influence shapes each vine and the saline breeze is part of the sensory landscape, Abadía de San Campio is born, a fresh and precise interpretation of the purest Albariño. Bodegas Terras Gauda makes this wine with grapes exclusively from its highest altitude vineyards, where cooler temperatures, lower humidity and marked thermal oscillations between day and night slow down ripening. This natural phenomenon allows the grapes to develop vibrant aromatic complexity, while retaining a sharp acidity and smooth texture.
The philosophy behind Abadía de San Campio is guided by a constant search for varietal purity, respect for the land and a deep understanding of the microclimatic conditions of each plot. The grapes are harvested by hand, meticulously selected and transported in small crates to avoid premature breakage of the fruit, thus preserving its most delicate expression from the vineyard to the winery.
Winemaking
The production of Abadía de San Campio begins with a cold pre-fermentation maceration, a technique that allows the release of the most subtle compounds from the grape skins without oxidation. Subsequently, alcoholic fermentation is carried out at low temperature in stainless steel tanks, using an indigenous yeast carefully selected by the winery itself. This controlled, precise process, respectful of the grape variety, guarantees a wine that clearly expresses the minerality of the soil and the maritime character of Rías Baixas. Once fermentation is complete, the wine is stabilised after a short rest before bottling.
Taste
Abadía de San Campio is vibrant and expressive from the first moment. The nose displays aromas of white fruits such as peach and apricot, accompanied by fresh notes of apple and ripe citrus fruits - lemon, lime - with delicate hints of aromatic herbs and pineapple. On the palate, the wine is sharp but juicy, with a lively acidity that adds verticality, freshness and persistence. The palate is silky, with a medium body and a long finish with subtle saline hints and herbal notes. It is a straightforward, honest and refreshing Albariño, ideal to accompany seafood, oysters, clams, crabs or spicy dishes from Asian cuisine.
