Description
Vodopivec Vitovska wine is considered the queen of the Carso, a region characterised by rocky terrain and red earth soils. This grape variety reigns supreme in vineyards located at an average altitude of 260 metres above sea level, with 10,500 plants per hectare. These plants, grown in the goblet training system, are designed to protect themselves from the strong bora wind that sweeps across the landscape. Each plant produces approximately 500 grams of grapes, which are harvested by hand.
Winemaking
Once harvested, the grapes are destemmed and pressed. Following this age-old principle, Vitovska de Vodopivec undergoes a process of fermentation with indigenous yeasts and maceration with the skins inside the amphora for 6 months. This prolonged contact with the skins in the unique environment of the amphora enhances an unparalleled aromatic side, enriching the wine with nuances and profiles that would be difficult to achieve by other winemaking methods.
After this period in the amphora, the wine is transferred to large Slovenian oak barrels, where it rests for 2 years. These barrels, made of a wood that is known for its ability to enrich the wine without overpowering its character, complement and refine the qualities already developed during the amphora stage.
No chemical stabilisers or enzymes are used throughout the winemaking process, and the wine is bottled unfiltered, thus respecting its purest essence.
Taste
Vodopivec Vitovska has a bright golden colour. Its powerful aroma evokes notes of apricot, pear, white peach and ash, complemented by a delicate perfume of elderflower. On the palate, this wine offers a generous texture, but remains light at 12.5% alcohol. Its palate is shaped by a chalky hand, which shapes the wine through to its lingering finish. It is an intriguing and delicious wine, perfect to enjoy now or in the future.
