Description
Vincent Charlot Le Rubis de la Dune Extra Brut is an exquisite creation that is composed of 20% Pinot Noir and 80% Pinot Meunier. This champagne comes from a small plot of 0.28 hectares called La Dune, located in Mardeuil. The vines, certified organic and biodynamic, that give origin to this wine were planted in 1955 in a soil rich in clay with iron, sand and flint.
Winemaking
The grapes are harvested by hand, destemmed and macerated for approximately 14 hours with their skins. The tank is then bled, gently pressed and fermentation begins with indigenous yeasts in neutral toasted oak barrels. Malolactic fermentation is not carried out, and the wine ages in the same barrels on fine lees for approximately 9 months. Subsequently, it is bottled unfiltered and unclarified, with tirage liqueur and aged on the lees for at least 36 months for secondary fermentation. Finally, it is disgorged and filled with the same wine, with a dosage of 4g/l, classifying it as Extra Brut.
