Description
From the hills of Fytia, in the Macedonia region of Naoussa, Apostolos Thymiopoulos makes wines that are an extension of the landscape: wild, mineral, deeply authentic. Thymiopoulos Rosé de Xinomavro was born from a clear idea - to give voice to Xinomavro in a rosé version that retains its nerve, its structure, its mountain essence. A wine that does not seek to please by excess of fruit, but by purity and character.
The grapes, from young, non-irrigated vines, grow between 450 and 650 metres above sea level on schist and granite soils. The area's continental climate, moderated by winds from Mount Vermio and the sea, along with a significant thermal oscillation, brings natural freshness, vibrant acidity and sharp elegance. Here, the rosé is not a by-product of the red, but a full, deliberate expression of its own identity.
Winemaking
The grapes for Xinomavro's Thymiopoulos Rosé are harvested by hand. The grapes are destemmed and macerated for 12 hours to extract colour and complexity. Spontaneous fermentation takes place in stainless steel tanks, where the wine remains for 5 to 6 months. It then spends 4 months in 500 litre second use oak barrels, gaining texture without losing freshness.
Taste
On the nose, Xinomavro's Thymiopoulos Rosé is subtle but precise: pink grapefruit, dried flowers, orange peel and a note of Mediterranean herbs. On the palate, the acidity is firm and clean, with tart red fruit (pomegranate, cherry) on a saline and stony background. The oak ageing adds an elegant, almost imperceptible texture, which supports a dry, long, slightly bitter finish. It is a rosé with an edge, cerebral, gastronomic. A wine that speaks of its land without needing to raise its voice.
