Description
In Chamery, in the heart of the Montagne de Reims (Premier Cru), Thomas Perseval Le Hazat is a plot Champagne that does not seek easy applause, but identity. Thomas Perseval works with a fixed idea: that Champagne can also speak softly and still assert itself. His family had peasant roots, between vineyard and cereal, but Thomas made the turnaround when he trained in Burgundy and returned obsessed with a more conscious organic viticulture. The brave decision - and not at all obvious in the region - was to push for organic with discipline, until it was certified in 2012. He didn't do it for a label, but out of conviction: "if the soil breathes, the wine breathes". Thomas Perseval Le Hazat is born from this terroir philosophy: no make-up, like a declaration of intent.
It is 100% Pinot Noir, from a vineyard planted in 1978 on a medium hillside, on sandy-loam soils that refine the line: less opulence, more tension. In this cool climate, where tradition often favours blending, Perseval separates micro-zones so that each tells its own story: a Premier Cru Champagne with its own pulse, made for those who value precision over brilliance.
Winemaking
At Thomas Perseval Le Hazat, the grapes go in for precision, not volume. It ferments with a minimal intervention approach, avoiding aromatic shortcuts and prioritising the character of the vineyard. Ageing is supported by barrels (depending on the cuvée, 228-500 L formats) and patient refinement: more than 30 months of ageing on lees in the bottle before disgorgement, to gain texture and depth without losing nerve. In its style, "laissez-faire" rules: no commercial yeasts, generally zero dosage and a very restrained use of sulphur when necessary. The aim is not to round off, but to preserve the internal architecture that makes a wine serious, gastronomic and with personality.
Taste
Thomas Perseval Le Hazat opens with a profile that is more mineral than festive: lemon, grapefruit peel, green apple and a background of barely hinted white fruit. There is no postcard "sweet brioche"; what comes through is toasted crust, fine lees and a sense of cold stone and wet sand. The bubble is precise, almost saline, and the acidity pushes like a stringer: straight, clean, uncompromising. In the centre there is a subtle earthy depth -Pinot Noir without perfume- and on the finish, that noble bitterness of citrus and chalk that makes you salivate. Brut Nature, dry, long, sharp and tremendously gastronomic.
