Description
Nobody was betting on Cucamonga Valley when everyone was looking for new terroirs on the coast. But Rajat Parr, with that almost visceral intuition of those who know how to listen to the land, decided to look back to the Lopez vineyard, planted in 1912 on sandy granite soils and battered by history and the Californian sun. Where others saw a relic, he saw a future. The result is called The Scythians White and has something of an emotional archaeology about it: rescuing a grape like the Palomino Fino and letting it speak with its own voice, without artifice, without filters. Just identity.
Winemaking
It all starts with the manual harvest, at the exact moment when the fruit still retains its natural tension. Direct pressing allows the purity and lightness to be maintained, but a small batch is worked with skins to add structure and texture. Spontaneous fermentation takes place in old Jerez butts - given by the legendary Ramiro Ibáñez, from Cota 45 -allowing the Palomino to express itself without make-up. Malolactic fermentation is completed, and the wine is aged on its fine lees for six months. No fining or filtering: everything here is transparency.
Taste
The Scythians White has the salinity of a memory by the sea and the tension of a silence that says more than a thousand words. The first sip surprises with an almost electric freshness, like a gust of wind that sweeps away the dryness of the landscape. Notes of raw almonds, dried hay, lemon zest and a breeze of sherry envelop it all with austere elegance. On the palate it is direct but deep, with a dry, persistent finish that leaves the sensation of having tasted something old and new at the same time. Like a wine that has survived oblivion to tell its story.
