Description
From the beginning, the Sicus project has been a declaration of principles: minimum intervention, maximum expression of terroir. Sicus Cru Marí Vermell is born of this radical conviction. Eduard Pié, its creator, chose to work with the very rare Cartoixà Marí -a variant of the pink-skinned Xarel.lo- grown in the La Masia vineyard, 215 metres above sea level and barely 6 km from the Mediterranean sea breeze. The soil, with a clay-loam texture, calcareous base and shallow depth, provides tension and a natural salinity that is clearly imprinted on each bottle. This is viticulture without cosmetics: sustainable agriculture, manual harvesting, minimal intervention in the cellar.
Winemaking
The vinification of Sicus Cru Marí Vermell follows an ancestral method. The grapes are whole vatted, with stems, and undergo a five-day infusion-fermentation in tanks, without destemming, capturing the essence of the fruit, its structure and slight tannic character. Subsequently, the wine undergoes final fermentation in bottle, with natural cork closure, and rests for eight years on its lees in contact with its lees. It is not filtered or clarified. This long ageing provides depth, controlled oxidative complexity and an integrated, creamy but lively, absolutely natural bubble.
Taste
On the nose, the Sicus Cru Marí Vermell is layered: notes of baked apple, raw almond, candied citrus peel, and a fine yeastiness reminiscent of sourdough bread. The mineral and saline background is unmistakable, almost like smelling a wet stone by the sea. There are also nuances of dried fennel, apricot skin and green tea. The palate is dry, incisive and delicately bitter, with acidity that remains vibrant, channelled by an airy texture. The bubbles are fine and persistent, and the finish is reminiscent of pink grapefruit, with echoes of seaweed and bitter almond. Despite its low alcohol content, this is no light wine: its vertical structure and tension make it deep and challenging.
This sparkling wine does not seek to please everyone. It is a wine for those who seek authenticity, salinity, longevity andcharacter. A wine for contemplation, gastronomy and, above all, for those who believe that the Mediterranean can also speak softly and with a raw soul.
