Description
From the moment the idea of Sicus Acidity Lovers was born, a boldness in love with purity was in the air. On the El Fondo del Mas estate, a single vineyard planted almost seven decades ago in soils of loamy texture and calcareous nature, the dream of a white wine that would capture the essence of sea and stone was woven. The Macabeo vines, 67 years old, grow at 200 metres above sea level, just 7 kilometres from the Mediterranean, which gives the wine a natural salinity and a tension that is not taught: it is lived. Eduard Pié made a brave decision: to make a wine that does not seek to please, but to express. A wine with its own voice, without make-up, with minimal intervention, where the earth speaks louder than technique.
Winemaking
The winemaking process of Sicus Acidity Lovers is as artisanal as it is radical. The grapes are harvested by hand, bunch by bunch, seeking the perfect balance between acidity and ripeness. Instead of pressing, whole bunches are infused and fermented in clay amphorae for 10 days: skin, stem and pulp coexist, generating a subtle extract, full of nuances. Then, without fining or filtering, the wine finishes fermenting in the bottle itself, in the ancestral style. There are no added sulphites or laboratory corrections. The result is a wine with a low alcohol content - 6.5% vol. - but with a vibrant intensity, produced in a limited production of just 800 magnum bottles (1.5 L).
Taste
In the glass, Sicus Acidity Lovers has a faint golden colour, almost straw-coloured, with coppery reflections that betray its contact with the skin. The nose is restrained, precise, with notes of green lime, tart apple, white currant and a subtly herbaceous background evoking wild thyme and fennel blossom. Nothing is exuberant here; everything is restrained, taut, like a finely tuned string.
On the palate, the impact of Sicus Acidity Lovers is immediate: a sharp, sharp, electrifying acidity that sweeps across the palate like an ocean current. The very fine bubbles act as a thread that carries this fresh, lively, saline sensation. The finish is dry, long, with an aftertaste reminiscent of citrus peel, wet stone and a whisper of yeast. Sicus Acidity Lovers is a wine for lovers of extreme acidity, for those who enjoy wine as a radical sensory act. Ideal with raw fish, oysters or even as a solo aperitif for those who are not afraid of the essentials.
