Sourced from specific blocks of estate-grown fruit, the 2019 Cabernet Sauvignon Hillside Select is another highly successful vintage. All Cabernet Sauvignon aged 32 months in 100% new French oak, it boasts intense aromas of pencil shavings, dark loam, cassis and plum on the nose, while the palate is full-bodied, super-ripe, rich, dense and concentrated—a truly impressive California vin de garde. Tannic but ripe, it finishes long and firm on the finish, adding a hint of mocha. To be released in September 2023, it's a strong showing and hopefully an indication that quality will remain high under the new ownership.

Description
Shafer Hillside Select Cabernet Sauvignon is a true expression of the land and heritage of the Napa Valley wine region. This wine comes from Shafer's hillside vineyards, located in a rocky amphitheatre that reflects the warm rays of the afternoon sun and channels cool ocean breezes. These vineyards have been cultivated since the 1880s, but it wasn't until the 1970s, with the arrival of John Shafer, that vines were planted on these rock-strewn slopes.
Made exclusively from a single varietal, 100% Cabernet Sauvignon, Shafer Hillside Select gains complexity from the variety of clones and rootstocks planted in the vineyards. Each of these brings its individual characteristics to the wine. The Cabernet Sauvignon grapes seek their roots through the thin volcanic soil before finding the bedrock beneath. Thanks to the poor nutrition and soil moisture, yields are low, and the harvested berries are small, dark and intensely flavoursome, similar in size to blueberries.
Winemaking
The hillside grapes are harvested in small bins so that they arrive intact at the winery. Once there, state-of-the-art crushing equipment is used to continue the selection process, removing the delicate stems. In the fermenter, the hillside must receives special treatment, with gentle maceration and pumping designed to extract every nuance from the grapes. Even the French oak barrels used for ageing are individually selected. The wine is aged in new French oak barrels for 32 months before bottling. Afterwards, the Cabernet rests for another year in the bottle before it is ready for release.
Taste
Shafer Hillside Select Cabernet Sauvignon embodies the classic richness, vibrancy and balance of the Hillside Select vineyard. Aromas emerge with power, offering black cherry, cedar, cassis and juicy red summer berries with lifted floral tones. Despite its youth, the complexity of the vintage is striking, fusing dark fruit with tobacco, espresso, black olive, red plum and black tea. The expansive mid-palate is complemented by ripe, integrated tannins that add depth and structure, culminating in a long, deep finish.
