Description
René Bouvier Fixin Crais de Chêne is a wine that, from the first sip, transports you to the heart of the Côte de Nuits. There is something in its character that speaks of the land, the passage of time and the almost artisanal care with which it is made. This winery, with more than a century of history, carries the legacy of several generations who have learned to understand the vineyard as a living organism, in constant evolution.
Made from 100% Pinot Noir, René Bouvier Fixin Crais de Chêne comes from a small corner between the villages of Couchey and Fixin, a place where nature has left its mark on the limestone and clay soils. The vines, more than 55 years old, have learned to grow with restraint, producing small clusters but intense in flavour. The grapes are harvested by hand, with a first sieving in the vineyard itself and a second in the winery, ensuring that only the grapes at the right point of ripeness pass on to the next stage.
Winemaking
Fermentation is carried out with indigenous yeasts and around 50% whole bunches, a method that provides structure and aromatic complexity. Everything is done gently, respecting the natural rhythm of the wine, without forcing it. Ageing lasts 12 months in French oak barrels (20% new), followed by 6 months in stainless steel to refine the wine before bottling, which is carried out according to the lunar calendar.
Taste
On tasting, the first thing you notice about René Bouvier Fixin Crais de Chêne is its balance. There is a mix of dark fruit and a subtle hint of citrus, as if someone had squeezed an orange peel over a glass full of ripe plums. On the palate, its tannins are present, but without imposing themselves, giving structure without stealing the limelight from its natural freshness. And then comes the finish, saline and mineral, like a breeze that leaves a vibrant, lingering sensation.
With time, René Bouvier Fixin Crais de Chêne becomes rounder, more expressive. The wild aromas of its youth give way to floral and earthy notes, making it clear that this is a wine with history and evolution. There is no hurry: with a 5 to 15 year ageing period, each bottle promises a different journey depending on when it is uncorked.
