Description
On the Castilian plateau, where altitude and temperature contrast define each cluster, the Pago de los Capellanes family project is forged. It is not a story of grand gestures, but of small decisions that change everything: leaving behind mass production to cultivate plots of land as if they were gardens, fragmented, observed, pampered. Decades ago, Tomás and Ángeles decided to plant roots not only in the soil of Pedrosa de Duero, but also in a way of understanding wine from authenticity, without haste or artifice. The name, which evokes an ecclesiastical legacy - the land was once owned by the town's chaplains - is a tribute to history, but the wine that is born here is of a precise and restrained modernity.
Pago de los Capellanes Roble is the gateway to its universe, but it makes no bones about it. A single varietal Tempranillo, drawn from young vines that already show character, grown on clay-limestone soils at an altitude of over 800 metres above sea level. An extreme continental climate - long winters, arid summers and a brutal temperature range - gives the grapes tension and depth.
Winemaking
As soon as the grapes arrive at the winery, they are sorted berry by berry. Alcoholic fermentation is carried out with indigenous yeasts, in stainless steel tanks, at controlled temperatures to respect the cleanest and most sincere expression of Tempranillo. The wine then rests for five months in fine-grained French oak barrels - elegant, non-invasive wood - which adds volume without stealing the limelight.
It is not over-filtered or subjected to aggressive fining: the aim is to achieve a lively texture, a lively mouthfeel and authenticity. Each bottle is a precise snapshot of the young, vibrant vineyard of the Riberadel Duero.
Taste
At first hit on the nose, Pago de los Capellanes Roble bursts with juicy black fruit: ripe cherry, fresh plum, freshly squeezed blackberries. But there's more - a faint background of vanilla, a spicy memory that caresses but doesn't overwhelm, a whisper of cocoa and damp earth that betrays its brief but accurate time in oak.
On the palate, the attack is direct and flavoursome. The young tannin is still sharp, but it is tamed by the freshness of a millimetric acidity. There is a delicious tension between the primary fruit and a structure that is designed for immediate pleasure, but with enough muscle to last in the glass and at the table. The finish is medium-long, with echoes of liquorice, dried leaves and a slight noble bitterness that invites the next sip.
