Description
Pago de Carraovejas is an emblematic wine from Ribera del Duero, an oenological reference that combines tradition and modernity. This red wine is made from 92% Tinto Fino, 5% Cabernet Sauvignon and 3% Merlot, varieties that add complexity and elegance. The vineyards are located in the Carraovejas Valley, climbing hillsides with a great diversity of soils, composed of limestone marl, clay and sandstone. The vineyard is worked under a philosophy of precision and ecological techniques, with specialised pruning to achieve vegetative balance. The austere-fertile soils demand self-regulation from the vines, promoting optimum yields and high quality grapes.
Winemaking
In the production of Pago de Carraovejas, the grapes are harvested by hand, carefully selected in the vineyard and then in the winery. The must is made by gravity to preserve the raw material. Fermentation is carried out with indigenous yeasts, and the wine spends 12 months in 225 and 600 litre French and American oak barrels, guaranteeing a balanced and structured ageing.
Taste
Pago de Carraovejas is fresh and harmonious on the palate, with a full-bodied texture and ripe tannins that add elegance. The wine offers a vibrant profile, with a predominance of ripe fruit, such as plums and cherries, along with notes of sweet spices and hints of creamy oak. The nose is dominated by aromas of black fruit and dried herbs. The palate is enveloping, balanced and remarkably fresh, characteristics that make this wine an ideal choice to accompany roasted meats or spicy lamb dishes.
