The nose of the 2020 Dulce Monastrell has the textbook descriptors for this sweet wine; tomato vine, black olives and Mediterranean herbs, really unmistakable. It's a modern take on the traditional sweet wines from the zone and was produced from un-grafted, 55-year-old Monastrell harvested in early November, with slightly overripe grapes. The grapes go through a long maceration in cement vats, over 30 days, and fermented partially with indigenous yeasts and then fortified to 16% alcohol. It is bottled unoaked with no less than 260 grams of sugar. It's dense, thick and full-bodied, sweet and with enough tannins to evolve in bottle and go with strong cheeses and chocolate desserts. 27,000 half-liter bottles were produced. It was bottled in February 2023.

Description
In the most arid areas of Jumilla, where the sun hardens the soil and the vines stubbornly cling to the poor limestone soils, a wine is born that is only made when nature permits. Olivares Dulce Monastrell is an act of patience and risk: the oldest vines on the estate retain their fruit until well into autumn, allowing the passage of time and the extreme climate to concentrate the sugars and aromas in each berry. This wine does not follow rules, nor is it produced every year: only five or six times a decade, when conditions are exceptionally perfect. When that happens, a Mediterranean jewel is born, powerful and profoundly authentic.
Here, the Monastrell expresses itself freely. The goblet-trained vines, more than 50 years old, are cultivated with minimal intervention, respecting the rhythms of the environment. The Bodegas Olivares team made a bold decision to let the grapes raisin on the vine, opting for a natural sweetness and concentration that can only be achieved with time and courage.
Winemaking
After manual harvesting, the overripe grapes that will give rise to Olivares Dulce Monastrell are subjected to long macerations with the skins, seeking to extract the maximum aromatic and tannic richness. Fermentation is stopped before completion, preserving natural sugars. It is bottled in January and rests for at least two years in the bottle before being released onto the market. In this way, Olivares Dulce Monastrell preserves its fresh, direct and unspoilt character.
Taste
Deep cherry red in colour with garnet hues, Olivares Dulce Monastrell displays a symphony of figs, dates, black plums, liquorice and ripe fruit on the nose, with a balsamic background that lightens its opulence. The palate is dense, honeyed and warm, but the well-integrated acidity keeps it vibrant. The finish is long, with notes of cocoa, coffee and candied black fruit, leaving a sensation of depth and freshness that invites you to continue. Ideal with chocolate desserts, blue cheeses or simply to be enjoyed on its own, slowly.
