Description
Mestres Clos Damiana Brut Nature Gran Reserva is a high-end cava produced by the Mestres winery, located in Sant Sadurní d'Anoia, in the heart of the Penedés region. It is a sparkling wine that stands out for its long ageing process of 14 years, which gives it exceptional complexity and elegance. It is made from a classic blend of native grapes from the region: Xarel.lo (60-65%), Macabeo (20%) and Parellada (15-20%), from vineyards over 50 years old.
Winemaking
The base wine is fermented in chestnut barrels for 12 months before being bottled for a second fermentation in the bottle, where it rests for 140 to 156 months. This long ageing under natural cork and the process of yeast autolysis give it a fine, well-integrated bubble and a complex structure.
Taste
In terms of its sensory profile, Mestres Clos Damiana has a bright golden colour and tiny, persistent bubbles. On the nose, it displays a wide range of aromas including notes of pastry, dried fruits such as walnuts and almonds, hints of honey, beeswax, and ripe fruits such as peach and apricot. The palate is creamy and enveloping, with a perfect balance between acidity and body, accompanied by flavours of brioche, cocoa and light mineral notes. The finish is long, lingering, with a subtle hint of bitterness reminiscent of raw almonds.
This cava is a real oenological jewel, ideal to accompany seafood, fish, rice dishes or simply to be enjoyed at special moments.
