The 2023 vintage is complex. September was a cold month, and that comes through in the 2023 Lapola, their first white made with Godello and small quantities of Albariño, Doña Blanca and Treixadura from older and younger vines on different soils—granite, schist and sand—at different altitudes and expositions. It fermented in oak containers of different sizes and concrete eggs, where it matured with the fine lees, and then was kept in stainless steel for eight months after it was blended. It's powerful and intense, with 14.1% alcohol, a pH of 3.4 and 6.2 grams of acidity, balanced parameters for an unctuous wine with density and clout, finishing with a subtle bitter touch. 35,600 bottles and 360 magnums produced. It was bottled in April 2025.

Description
Lapola is a barrel-fermented white wine that represents one of the most curious and complex expressions of the Ribeira Sacra, an appellation of origin that is attracting attention for its wines of exceptional quality. This wine is the result of a meticulous selection of indigenous varieties, composed of 88% Godello, 10% Albariño, and 2% Doña Blanca, which gives it a unique and distinctive personality.
Winemaking
The elaboration of Lapola follows a careful process that begins with a manual harvest, carried out in 10-kilogram boxes between mid-September and October, with a manual selection in the vineyard cluster by cluster. After two days in cold storage, the must is pressed and de-stemmed, and then vinified individually according to variety and plot of origin. Fermentation is spontaneous and takes place in 5-hectolitre barrels, 12,000 and 24,000-litre foudres and 7,000-litre ovoid concrete tanks. Ageing is carried out in a first phase in 600-litre French oak barrels and 1,200 and 2,400-litre Austrian foudres of various uses, followed by a second phase in ovoid concrete tanks for natural stabilisation, remaining on fine lees without malolactic fermentation.
Taste
Lapola stands out for its freshness and elegance, with a very balanced acidity and a good volume in the mouth thanks to its ageing. It is bright yellow to the eye, while on the nose it is citric, intense, with a very marked floral note. On the palate, it reveals itself as a fresh, elegant wine, with a very balanced acidity and good volume due to its ageing, culminating in a long, persistent finish. This flavour profile makes it an ideal companion for grilled fish and mild rice dishes. We recommend serving between 12 and 14 °C and decanting a couple of hours before drinking to fully enjoy its qualities.
