Description
Droin Petit Chablis is made exclusively from the Chardonnay grape variety. This wine comes from two plots located on a plateau above the Grands Crus, with predominantly Portlandian limestone soils, which gives it its unique character. The vineyard, covering 1.85 hectares, has vines that are on average 30 years old.
Winemaking
Vinification is carried out by pneumatic pressing, followed by fermentation with indigenous yeasts in stainless steel tanks. Malolactic fermentation is systematic, which softens the wine's acidity, and the ageing process lasts between 8 and 10 months before bottling. The annual production is approximately 14,000 bottles, which makes it a relatively exclusive wine. This Petit Chablis is renowned for its freshness and minerality, characteristics that are due to both the terroir and its careful winemaking.
Taste
The taste of Droin Petit Chablis is bright and expressive from its youth. It offers a nose rich in ripe citrus aromas with subtle notes of stone fruit, such as peach. On the palate, it is a medium-bodied wine with predominantly fruit flavours intertwined with a prominent salinity on the finish, clearly reflecting its origin in limestone soils. The acidity is vibrant, adding freshness and making it a particularly suitable wine to accompany seafood, especially oysters. This wine can be enjoyed in its youth to take advantage of its fruity expressiveness, but it also has the potential to age for some years, developing greater complexity over time.
