Dominio de Tares Cepas Viejas is a crianza red wine with all the elegance and subtlety of the Mencía single varietal from the Bierzo region, located in San Román de Bembibre.
The vines come from a selection of vineyards over 60 years old planted on south-facing slopes at an altitude of 600 metres above sea level. The vineyard is under a cool Mediterranean climate on a soil containing calcareous clay, slate and gravel.
The grapes are harvested by hand, cluster by cluster, at optimum ripeness and transported in 15 kg crates. Once in the winery and after destemming and crushing, the alcoholic fermentation process is carried out under controlled temperature with a maximum of 30°C in stainless steel tanks for approximately 15 days.
The malolactic fermentation takes place 100% in American barrels and the ageing process takes between 9 and 12 months in French and American oak barrels. On the other hand, the wine rests in the bottle rack for 12 months before being released to the market.
Dominio de Tares Cepas Viejas is a red wine that shows hints of fruit with a full body, vibrant acidity and delicate tannins. On the palate it is subtle, round and balanced.
