Description
Cota 45 Agostado Cortado is a white wine that captures the essence of Jerez's winemaking tradition, thanks to Ramiro Ibáñez's innovative and respectful approach. This wine stands out for its unique blend of grape varieties, composed of 50% Perruno, 40% Uva Rey and 10% Palomino. The choice of these grapes, especially the old Perruno and Uva Rey, reflects a dedicated approach to the oxidative winemaking style that marked the traditional methods of the region.
Winemaking
The winemaking of Cota 45 Agostado Cortado begins with a manual harvest, followed by a complete pressing of whole bunches in two old butts where the juice ferments spontaneously without temperature control. This natural process is crucial for developing the flavour profile of the wine. After racking, the wine rests in the same butts for three years. The first six months under a veil of flor and more than two years of oxidative ageing, which not only concentrates the alcohol but also intensifies the typical characteristics of Palo Cortado.
Taste
The taste of Cota 45 Agostado Cortado is deeply complex and evocative. Palates will detect a surprising intensity, marked by notes of dried fruits such as almonds and hazelnuts, hints of bakery and ripe stone fruits. It also has mineral undertones and a medium-low acidity that culminates in a rich, well-balanced taste experience. The mouthfeel is distinctive, offering a texture reminiscent of traditional whites but with a depth and character that invites you to explore every sip.
This wine is not only a testament to Ibáñez's winemaking skills, but also to his passion for reviving the region's almost forgotten grape varieties and practices, giving each bottle a story to be enjoyed sip by sip.
