Here's a wine that I have not seen in many years. The organic COS 2019 Cerasuolo di Vittoria Classico Contrada della Bastonaca is a blend of 60% Nero d'Avola and 40% Frappato. It shows a medium dark appearance with floral aromas of rose, candied lilac, sour cherry and unripe plum. The wine is very fresh and tonic with a pretty mineral theme that adds focus and definition.

Fermented with indigenous yeasts in concrete tanks. Aged for 24 months in Slovenian oak foudres, 12 months in concrete tanks and 1 year in bottle. Bottled slightly sulphited.

Cos Cerasuolo di Vittoria Classico Della Bastonaca is produced at Azienda Agricola COS, a renowned Sicilian winery founded in 1980, committed to biodynamic agriculture and minimal interventionism. Cos Cerasuolo di Vittoria Classico Della Bastonaca is made from 60% Nero d'Avola and 40% Frappato, grapes harvested by hand in the Bastonaca area of southeastern Sicily. The vineyards are located 230 metres above sea level, on red earth soils, rich in calcium and with a mixture of siliceous sand and clay. The vines have an average age of 45 years, and the grapes are harvested at the end of September or the beginning of October.
Winemaking
Cos Cerasuolo di Vittoria Classico Della Bastonaca ferments spontaneously with indigenous yeasts, following a fermentation process on the skins, and is refined in Slovenian oak barrels for 24 months before bottling with a small amount of sulphur dioxide. It is a wine that stands out for its limited production and its respect for winemaking traditions.

Cos Cerasuolo di Vittoria Classico Della Bastonaca offers a rich and balanced sensory experience. On the nose, aromas of red fruits such as wild strawberries and ripe cherries are complemented by notes of spice and balsamic hints. The palate is fresh, with soft, well-structured tannins. Lively acidity and rounded tannins contribute to a medium body with a lingering, elegant finish.
