Free-run alcoholic fermentation with indigenous yeasts with 20-40 days maceration for the Tempranillo, carbonic maceration for a part (25%) of the Tempranillo and 60 days maceration for the Albillo. Aged for 5 months in stainless steel tanks. Bottled unfiltered and without added sulphites.

Elaboration
After manual harvesting, the grapes are carefully selected and destemmed before being fermented in stainless steel tanks at controlled temperatures.
Once fermentation is complete, the wine is aged for 12 months in French oak barrels, which gives it its aroma of red fruits, spices and toasted notes. After ageing, the wine is bottled and left to settle before being marketed.
