Description

From its modest plot in Loue, north of Arbois, comes Cavarodes Côtes du Jura Vin Jaune, a liquid ode to the most authentic Jura. The idea came from Etienne Thiébaud, determined to honour the ancestral tradition of vin jaune with organic methods and artisanal soul. After his experience at La Tournelle, he decided to plant and work Savagnin vineyards ranging in age from 15 to over 100 years old, almost like guardians of time and Jaguar terroir. On a clear night, he decided to follow the lunar calendar for each vineyard work, a courageous decision that connects man with the invisible rhythms of nature. This single varietal vin jaune embodies the personality of the Côtes du Jura: marl and cold limestone soils, continental climate with capricious summers and harsh winters, and a tradition that reveres slow oxidation under veil, conveying minerality and structure.

Winemaking

The Savagnin grapes are harvested late, concentrating sugars and alcoholic potential. The must ferments with indigenous yeasts and is transferred to old casks - not completely filled - where the miracle begins: the veil, similar to the flor of Jerez, forms on the surface of the wine and protects it while it evolves silently for seven years. Etienne entrusts this process to time, without unnecessary racking, allowing small controlled oxidations to mould the depth of the wine. Cavarodes Côtes du Jura Vin Jaune is finally bottled in 62 cl "carnation" bottles, as Mandó law dictates, celebrating the little that remains after the long evaporation process.

Taste

Cavarodes Côtes du Jura Vin Jaune displays a fascinating sensory range: its deep golden colour seems to radiate stories of damp interiors and steely patience. On the nose, clear oxidative notes emerge: dried apple, toasted nut, dried citrus, herbs and subtle mineral echoes. On the palate, it is both austere and vibrant: dry, edgy, with firm acidity, and a texture that resonates a taut, lively structure. There is a delicate interweaving of spices, a saline touch, and a persistence that does not shout, but seduces with restraint and precision.

Cavarodes Côtes du Jura Vin Jaune does not present itself as a wine for the general public, but as a work of conviction, an ode to the Jura in liquid form. The purest expression of Savagnin under veil, born of intuitive choices and deep roots, a wine for those who love the mineral coldness only broken by the warm complexity of time.
