Description

From the first crunch of the earth, Etienne Thiébaud felt a reverential bond with the rocky line that snakes along the Loue River in the northern Jura. The idea for Cavarodes Côtes du Jura Savagnin Pressé - a wine born from the direct pressing of pure Savagnin - came to him one day as he watched the mist play over the 15-115 year old vines at Cramans: he decided to capture the essence of that morning, that living minerality. The Savagnin, the only protagonist, imposed itself with a clear voice in a land of marl and limestone, where the cool climate and the thermal oscillation create grapes with tense acidity and saline features. That courageous gesture - to dispense with blends, to embrace authenticity - marked his philosophy: winemaking with minimal intervention, in the integrity of the terroir.

Winemaking

After a harvest in which each cluster is cared for as if it were an ancestral message, Etienne gently and almost ceremoniously presses the Savagnin. The must, delicately obtained, ferments with indigenous yeasts without additives or artifice. The Cavarodes Côtes du Jura Savagnin Pressé then rests in old French oak vats, where time progresses calmly, without sulphur, without filtering, respecting every nuance. Some vintages are even vinified according to the lunar calendar, as in an ancestral choreography with nature. There is no intensive fining, and if a touch of sulphur is added, it is just enough to subtly protect. Thus it flows, without intervention, until bottled with just a hint of residual CO₂ to preserve its freshness.

Taste

The first thing that hits us in Cavarodes Côtes du Jura Savagnin Pressé is an electric energy. On the nose, notes of baked lemon and sparkling, clean acidity burst forth like lightning bolts of pure energy. It is followed by echoes of gunpowder and a massive minerality that embodies the aridity of the Jura.

On the palate, Cavarodes Côtes du Jura Savagnin Pressé beats with intense vitality; it is smooth and enveloping, but with a structure that doesn't give an inch. The fine, solvent acidity cleanses the palate and leaves a long aftertaste, with hints of spice and salt, and an energised roundness that seems to linger beyond the echo of the sip.
