This wine that changed the perception of Galician reds in 2010, and the 2021 As Caborcas is lighter and more aromatic, reflecting a more Atlantic but challenging year when they had to work hard to deliver this beauty. The vines are over 80 years of age and are a mixture of varieties planted on poor granite soils in terraces overlooking the Bibei River. It fermented with indigenous yeasts in small stainless steel and oak vats and matured in 1,500- and 2,000-liter foudres for 15 months. This is the more serious of the 2021 reds; it is nuanced, elegant and insinuating and less aromatic than the others. It's textured and elegant, fine-boned and fine-grained, with a sense of great harmony. 1,950 bottles were filled in July 2023.

Description
As Caborcas is an extraordinary wine from the Valdeorras region in Galicia, where the Atlantic and continental climates are combined. This wine is the result of the effort and dedication of the winegrowing families who have worked these lands for generations. The vineyards are located on poor, shallow granite soils, arranged in terraces on steep terrain along the Bibei River, in the village of Santa Cruz. The traditional varieties that make up this wine are Mencía, Merenzao, Sousón, Godello and a small proportion of Garnacha.
Winemaking
The winemaking process is simple, using small wooden barrels and stainless steel tanks, with a light ageing for 15 months in 1,500 and 2,000 litre oak foudres to preserve the wine's Atlantic finesse.
Taste
As Caborcas is an intense and elegant experience, combining balanced ripeness with a robust structure. The wine stands out for its balance and elegance, with a juicy texture and fine but present tannins. The floral and aromatic touches are remarkable, offering a complexity that envelops the senses. With a limited production of only 2,600 bottles, every sip of As Caborcas is a testament to the commitment and meticulous attention to detail in its production.
