Derived from the 2019 vintage, the NV Brut Nature Les Cochènes saw two years' élevage in demi-muids before tirage. Offering up attractive aromas of apple, wintergreen, mint and flowers, it's medium-bodied, pillowy and charming, with a lively, fine-boned profile and a penetratingly saline finish. The soils here are sand over sandstone.

This young winemaker, heir to 13 generations of Champagne know-how, has become one of the region's most inquisitive and experimental figures. His estate, located in Janvry, includes small plots in Vrigny and Gueux, where Pinot Meunier reigns supreme.
Winemaking
The vineyard of Les Cochènes, planted in 1990, sits on sand and sandstone soils. And this is where the magic begins: Lamblot does not follow the rules to the letter. Instead of green pruning, he lets nature take its course, integrating permaculture and planting fruit trees among the vines. Harvesting takes place in the early hours of the morning, when the breeze is still fresh and the grapes retain all their expressiveness. Fermentation takes place in used oak barrels, where the wine rests on its lees for at least two years before disgorging, with no added sugar. The result: a Brut Nature in its purest state.
Taste
The first nose of Alexandre Lamblot Les Cochènes is a breath of fresh air. Notes of ripe apple, mint and white flowers intertwine, almost like a walk in the countryside after the rain.
