The Parés Baltà Winery has a history of more than 200 years during which the family has been dedicated to the cultivation of vines in the area of Pacs del Penedès, located about 30 kilometres from Barcelona and the Mediterranean Sea.
The tradition of viticulture in this family has passed from generation to generation in an uninterrupted way, since 1790, when it was founded. The Cusiné family took over in the 1970s and it is now the third generation of this family to run the business, led by Joan and Josep.
However, it is their wives, the oenologists María Elena Jiménez and Marta Casas, who have promoted the production of organic wines and cavas, combining traditional and modern methods.
The winery's estates and vineyards
The five estates of the Parés Baltà winery are quite biodiverse. The most interesting thing is that this family has its own flock of sheep, as well as honeycombs of bees to fertilise the soil and pollinate the plants.
The Parés Baltà winery has an important variety of crops, such as almond and olive trees, as well as vineyards. On the other hand, these estates have very different climates and soils, which, together with the winemaking process, gives each wine different and special attributes. The altitudes are also very variable, ranging from 170 to 750 metres above sea level.
The best certified wines
In 2004, the Parés Baltà winery was certified as an organic winery, and in 2012, it obtained the Demeter international certification as a biodynamic winemaker.
Currently this winery has two lines of wine production, the classic range and the micro-cuvées. The classic range wines are produced annually and the microcuvées are not produced annually, but are of limited production of 500 bottles or less.
Winemaking at the winery
The grapes are harvested by hand when they reach optimum ripeness. To protect the soil, nourish it and prevent its degradation, mulch and organic compost are used, which comes from the animal waste of the family's flock of sheep, as well as waste from the plants on the vineyards.
The biodynamic preparations and compost used in the soil of these farms improve the properties of the soil and this has a direct influence on the quality of the grapes, and therefore on certain characteristics of the wines such as aroma and flavour.
Their wines are quite expressive, perfectly reflect the terroir and, in addition, convey the origin of the winery, as well as the Mediterranean essence.
