Description
Werlitsch Ex Vero II is a clear example of Brigitte and Ewald's passion and dedication. Originating in Austria, Steiermark, Leutschach, this wine is made on clay-limestone and alluvial soils.
The varieties used for this wine are a blend of Sauvignon blanc 90% and Chardonnay 10%, which gives it a unique and distinctive personality.
Winemaking
The winemaking processes for Werlitsch Ex Vero II include a manual harvest, destemming and alcoholic fermentation with indigenous yeasts in open oak vats. Ageing is carried out for 24 months in similar 3,000-litre vats and a further year in the bottle.
Taste
Werlitsch Ex Vero II is a sensory experience that combines purity and minerality. It presents a clear and bright Sauvignon aroma without exoticism, purist and stony. At first, a slight flinty reduction and a subtle wood spice can be perceived. However, as it oxygenates, minimal fruit notes are revealed, such as green apple and a hint of apricot, but herbal spices, fresh hay and wet stone predominate.
Despite its intensity, the wine is balanced and not as wild as other versions, showing impressive texture. What really stands out is its savoury grip and length on the palate, which is unique. Its compact and highly condensed structure is captivating and exciting.
