The 2004 Son Negre is a blend of 90% Callet and 10% Fogoneu from 40- to 60-year-old bush vines with microscopic yields. It was then aged 16 months in new French oak. Dark ruby in color, the wine has a remarkable nose of cedar, spice, earth, coffee, chocolate, and red currants. Its velvety palate feel is reminiscent of great Burgundy, suave elegance combined with great concentration. These wines have no track record for ageability but surely this brilliant effort can be drunk with pleasure over the next 10+ years.

Description
Son Negre is a unique wine from the Tramuntana region of Mallorca. The vines in this area grow in calcareous soils with a high mineral presence and low water retention, conditions that give the soil a characteristic red colour, known locally as Call vermell. These vines benefit from an exceptional biological energy, thanks to the nutrients in the soil and the presence of fruit trees that coexist in the plots.
Elaboration
The grapes are harvested by hand in 10 kg crates, with a careful selection of grapes in the vineyard and a further selection in the winery, using optical technology to ensure the best quality. Fermentation takes place in 4,000 litre French oak vats at a controlled temperature, using indigenous yeasts selected over the years. The wine is aged for 16 months in new, very fine-grained, medium to medium-long toasted French oak barrels, with a racking halfway through the ageing process. Before bottling, the wine spends approximately two months in concrete tanks.
Taste
The taste of Son Negre is a true expression of its terroir, with remarkable complexity and depth. On the palate, this wine presents intense notes of red fruits and dried fruits, with a mineral touch that reflects the rocky soils of its origin. The ageing in French oak adds nuances of spices such as rosemary and thyme, as well as a subtle woody aroma that gives it structure and elegance. The finish is long and persistent, evoking the Mediterranean landscapes of the Tramuntana. Callet, the 100% predominant grape variety, contributes significantly to this complex profile, providing its distinctive character and robustness. With an alcohol content of 14%, this wine has a total acidity of 5 g/L and a pH of 3.86, characteristics that ensure a balanced and sophisticated oenological experience.
