Description
In the early years of the millennium, a small group of visionary winegrowers and winemakers - including key figures from Peter Sisseck's entourage - decided to look beyond the classic boundaries of Ribera del Duero. Right on the western edge of the appellation, in the town of Sardón de Duero they founded Quinta Sardonia, driven by a firm conviction: that the Duero does not stop where the maps show it. From the outset, they opted for biodynamic viticulture, a decision more spiritual than technical, born of an intimate connection with the landscape, the light and the rhythms of the land.
Sardón, their entry-level wine, is not a minor wine. Rather, it is an honest and vibrant introduction to the deep character of the Douro terroir. A plural cuvée, composed mainly of Tempranillo (Tinto Fino), complemented by traces of Cabernet Sauvignon, Syrah, Garnacha and Malbec, which add structure, tension and a very unique aromatic nuance. The grapes come both from the estate's young vineyards and from small plots of selected vine growers at varying altitudes (from 700 to 800 metres), on limestone, marl and river gravel soils, crossed by the direct influence of the Duero River and the cool winds of the Castilian plateau. An environment where the temperature contrast is extreme, which tightens the skins, slows down the ripening process and favours a clear and vertical expression of the fruit.
Winemaking
The grapes destined for Sardón, harvested by hand and selected bunch by bunch, enter the winery without excessive intervention, in order to preserve their original character. Spontaneous fermentation with indigenous yeasts in small stainless steel and concrete tanks, where each plot is vinified separately. The work is minimalist, almost Zen-like: gentle pumping over, moderate extractions, ageing for 6 to 12 months in foudres and French oak barrels of various uses, which refine the wine without making it up. The wine is bottled without fining and with very light filtration, respecting its lively energy as much as possible.
Taste
In the glass, Sardón speaks with restrained firmness, with a young but confident voice. Deep colour with a violet rim, it announces nerve and youth. On the nose, a precise black fruit emerges - fresh plum, blackberry, blueberry - escorted by a balsamic background, an echo of undergrowth, thyme leaves, graphite and a hint of faint cocoa. There is no excess, no easy sweetness.
On the palate, the entry is vertical, juicy, with a vibrant acidity that gives speed to the drink. The tannins are fine but present, like a muscular structure under the skin. The palate is long, with a saline and earthy reminiscence of limestone soils. The wine stretches on the palate, not crushed. It has that energy of wines with altitude and soul.
Sardón is a sincere wine, with nerve and depth, which does not seek to impress with artifice, but to seduce through transparency. A gateway to the Quinta Sardonia universe, and at the same time, a wine that can sustain a whole table.
