Description
Founded in 1998 by a group of visionaries led by Jerôme Bougnaud and Peter Sisseck -the famous creator of Pingus-, Quinta Sardonia was born with a clear intention: to make wines that express the deep and sober character of the Ribera del Duero, but from a biodynamic point of view, free, without strict geographical boundaries or appellation restrictions. A few metres from the border with the Ribera del Duero DO, in Sardón de Duero (Valladolid), its vineyards are planted on a mosaic of chalky, gypsiferous and stony soils, at different altitudes, between 760 and 830 metres above sea level.
Quinta Sardonia QS2 is the winery's "second wine", although that hardly does it justice. In its interior Tempranillo (Tinto Fino) coexists with small proportions of Cabernet Sauvignon, Syrah, Merlot and Malbec, assembled with precision. An anecdote that defines Quinta Sardonia' s free spirit: in 2006, when the DO's regulatory committee rejected the wine for not conforming to the expected profile, they decided to abandon the appellation. They chose authenticity over the label, character over complacency. This is how QS2 was born, a wine that does not seek to please everyone, but to excite those who know how to listen to the voice of the land.
Winemaking
Each plot is vinified separately, respecting the identity that the soil and altitude give to each variety. The grapes are harvested by hand, with rigorous selection in the vineyard and then on the table. After a gentle destemming, fermentation takes place spontaneously, with indigenous yeasts, in small steel and concrete tanks. Extraction is restrained, seeking elegance rather than power.
Quinta Sardonia QS2 is aged for 12 months in second and third use French oak barrels, which allows the wine to oxygenate and polish itself without being dominated by the wood. It then rests for a few more months in tanks before bottling, without excessive fining or filtering. The result is an honest, lively wine, with the vibrancy of biodynamics in every sip.
Taste
From the first nose, Quinta Sardonia QS2 is reserved, almost meditative. Discreet black fruit, such as ripe plum and blueberry, is interwoven with earthy notes, graphite, a balsamic whisper of undergrowth and a background of dried spices - white pepper, clove and tobacco leaf. All on a mineral architecture reminiscent of the dry dust of the Castilian roads in August.
In the mouth it is linear, fine, with a silky entry that gives way to a tense, structured but fluid centre, where the notes of black and red fruit are escorted by firm, polished tannins and an acidity that supports the wine with ease. There is a saline touch on the finish, an almost chalky sensation that cleanses the palate and lengthens the persistence. Quinta Sardonia QS2 does not seek exuberance or muscle, but rather precision, depth and that somewhat sombre, elegant touch that distinguishes the great wines of altitude.
