Description
The Ponce La Xara wine is a unique expression of Garnacha, produced by Juan Antonio Ponce in the Manchuela DO. This wine is distinguished by its provenance from a recovered vineyard, the Gastón, which covers 10 hectares and is characterised by its clayey, calcareous and granitic soil. The vines are about 40 years old, and the climate of the area is continental with Mediterranean influence.
Winemaking
Biodynamic viticulture is used, without soil enrichment or irrigation. Cover crops are encouraged and frequent ploughing of the soil is avoided in order to maintain its structure. Harvesting is done by hand, and the grapes are cooled for 24 hours to 8°C before processing. Fermentation is carried out with indigenous yeasts in 4,500-litre oak vats, and ageing lasts 7 months in these same vats and in 600-litre oak barrels. This process culminates in a wine that is neither clarified nor filtered before bottling.
Taste
Ponce La Xara is an amalgam of mineral tones and freshness. Chalky tannins, floral notes and juicy red fruits are perceived. La Xara offers a taste experience that combines mineral seriousness with refreshing acidity, resulting in a flavoursome, fluid wine with polished tannins. Its aromatic profile is reminiscent of the Garnacha grapes of Gredos, and on the palate, the granitic texture of the soils is palpable. With a moderate alcohol content, this wine stands out for its elegance and finesse, being another example of Juan Antonio Ponce's good work. It is also suitable for vegans and vegetarians.
