Description
Some wines are born from patience... and others from a powerful intuition. Matsu La Jefa is the kind of wine that emerges when a woman looks at a vineyard and knows exactly what she wants to express with it. The idea was conceived in the minds of the Bodega Matsu team as a quiet but firm claim: to give prominence to sensitivity, care and a different way of interpreting the strength of the land. Because in a remote corner of the Toro D.O., where the sun punishes with intensity and the wind sharpens the leaves of the vines, there is also room for elegance and balance.
Here, in stony, sandy soils where vines struggle to survive, La Jefa emerges with its own voice. A white wine made from an unusual blend in this area: 85% Malvasía castellana, 10% Viura and 5% Verdejo, from old vines cultivated with organic methods, without herbicides or chemicals. The Malvasía, a forgotten variety that has been lovingly rescued, provides structure and character; the Viura and Verdejo, fresh and vibrant nuances. This unexpected trio becomes a declaration of intent: Toro can also speak in white.
Winemaking
Each cluster is harvested by hand, respecting the time dictated by the grape. Fermentation takes place spontaneously with indigenous yeasts in concrete tanks and 600-litre French oak barrels. There it is aged for 14 months on its lees, unhurriedly, with gentle battonage, allowing the wine to acquire volume, texture and an enveloping personality. It is not corrected or forced. La Jefa is like a good leader: she lets things happen, but always under her watchful eye.
Taste
The first sip is a surprise: unctuous but fresh, with notes of ripe apricot, dried flowers and a slightly smoky background. Then comes that fine salinity, as if the soil is speaking, and a long memory of white fruit and citrus peel. The palate is full, but not overwhelming. Each sip asks for another, like someone who wants to listen to a story that has just been told in their ear. The Boss doesn't need to raise her voice to be noticed. Mandó, yes... but with elegance.
