Description
The Pariente surname has been resonating among the Castilian vineyards for decades, not as an echo of the past, but as a declaration of principles. It was Victoria Pariente, daughter of winemaker José Pariente, who in the 1990s decided to reinterpret her father's legacy with a technical and poetic vision. That dream began with a single barrel and many doubts, but also with a certainty: that the Verdejo, that grape that is so much our own, deserved something more than the shadow of anonymity. Thus was born a wine that is, more than a product, a conversation between generations. The winery, located in the heart of the Rueda DO, cultivates vineyards that rest on stony plateaus , with gravelly and clay-limestone soils, where the continental climate expresses itself with extreme contrasts, cold nights that sculpt freshness and dry days that chisel concentration.
José Pariente Verdejo is born in plots located at an altitude of over 700 metres, where the vines, some of which are already old, offer moderate yields but with a touching intensity. Here, the wind is not a nuisance: it is an ally. The wide temperature range ensures slow ripening and the precise preservation of aromas. It is Verdejo in its purest form, without make-up, with the strength of the land and the nobility of those who do not seek to please everyone, but to move those who know how to listen.
Winemaking
The grapes are harvested at night, when they are at their freshest, almost asleep, thus preserving their aromatic character. Once in the winery, the José Pariente Verdejo undergoes a cold maceration for a few hours, allowing the aromatic compounds to be released slowly. The free-run must is gently separated and fermented in stainless steel tanks at a controlled temperature, avoiding oxidation and keeping the varietal expression intact.
The José Pariente Verdejo remains on its fine lees for several months, a gesture that does not seek weight, but texture. There is no oak here, no artifice: just purity, time and patience. This process adds volume on the palate, without sacrificing the verticality that defines it. Everything is bottled without haste, when the wine has reached an almost meditative balance between freshness and complexity.
Taste
From the first contact, José Pariente Verdejo opens with a precise, tense nose, where white grapefruit, fresh fennel, cut grass and a slight trace of aniseed intertwine with a dry minerality, like the dust of a stone path in August. It is not a fruity or exuberant wine: it is restrained, elegant, clean. The fruit is there, yes, but it does not dominate; it appears with austerity: water pear, green apple, a very subtle apricot breeze.
Its character is revealed on the palate: sharp, vibrant, almost electric. The attack is direct, with a lively acidity that sweeps the tongue in a wave of saline freshness. As it progresses, the wine shows a glyceric texture and a surprising structure, the fruit of this work on the lees. The finish is long, herbal, with a bitter aftertaste characteristic of authentic Verdejo -not disguised-, reminiscent of green almonds and boxwood.
