The 2018 Valdegatiles is the most structured of the single-vineyard bottlings from 2018, a challenging year with a happy end. This was bottled at 14.3% alcohol and with a pH of 3.51, so medium ripeness and a medium to full-bodied palate with good freshness, acidity and balance, but it's still a little marked by the élevage of 18 months in second use French oak barrels. This terroir has more clay, and the wines tend to be wider and more voluptuous, with generous tannins. This needs more time in bottle. 1,343 numbered bottles produced. It was bottled in July 2020.

Description
Dominio de Atauta Valdegatiles is a wine that embodies the purest expression of the landscape of the Ribera del Duero, specifically of the Atauta Valley in the province of Soria. This winery, founded in 2000, has positioned itself as a benchmark in the production of wines that capture the essence of its pre-phylloxera vineyards, some of which are over 120 years old. Dominio de Atauta Valdegatiles is made exclusively with Tinto Fino (Tempranillo), an indigenous variety that reflects the typicality of the region.
The vineyards that nurture Dominio de Atauta Valdegatiles are located at an altitude of 930 metres above sea level, in an environment of extreme continental climate with Mediterranean nuances. These plots, distributed over an area of 1.09 hectares, have deep, clayey soil, rich in minerals, on a limestone base that gives the wine a remarkable minerality and structure.
Winemaking
Dominio de Atauta Valdegatiles is harvested by hand, in small boxes to preserve the quality of the grapes, followed by a double selection on the table to ensure that only the best bunches are used for the vinification process. Fermentation is carried out in stainless steel tanks, with indigenous yeasts and meticulous temperature control. Cold maceration lasts seven days, with twice-daily punch-downs to gently extract colour and tannins. Ageing is carried out in French oak barrels, 20% of which are new and the rest second use, for 18 months. The entire process, from harvest to bottling, is governed by biodynamic principles, respecting natural cycles and enhancing the expression of the terroir.
Taste
When tasting Dominio de Atauta Valdegatiles, one perceives a wine of great complexity and structure, faithful to its origin. It offers notes of ripe black fruits such as plum and blueberry, with hints of spices and aromatic herbs such as thyme and lavender, which give the wine a sophisticated and deep profile. The palate is full and enveloping, with silky, well-integrated tannins that promise a promising future in the bottle. The balanced acidity and subtle minerality provide freshness and a long finish, which lingers elegantly. This wine is ideal to accompany robust dishes such as red meats, game and cured cheeses, making every sip a memorable experience.
