Description
In the heart of the Loire, on south-east-facing granite soils, Domaine de L'Ecu Carpe Diem is one of the deepest and freest interpretations of Melon de Bourgogne. The plot, just 1.2 hectares in size, is cultivated like a living organism. Pioneers in organic farming since 1975 and certified biodynamic since 1998, Domaine de l'Ecu understood early on that the greatness of wine does not lie in invasive techniques, but in listening carefully to the land. Yields limited to 30 hl/ha, manual working of the soil and harvesting entirely by hand reflect an uncompromising philosophy. The courageous decision was taken to age this wine in amphorae, moving away from the classic Muscadet profile and seeking a more textural and profound expression.
Winemaking
At Domaine de l'Ecu Carpe Diem, the grapes are selected cluster by cluster and gently pneumatically pressed. Fermentation is carried out exclusively with indigenous yeasts, respecting the identity of the terroir. The wine is aged for 15 months in clay amphorae, which allow delicate micro-oxygenation without adding external aromas. There is no fining or filtration; the wine is bottled as it is, preserving its natural energy and density. It is a process of patience and consistency, where time is the true architect.
Taste
In Domaine de l'Ecu Carpe Diem, the nose is broad and enveloping, with layers of lemon peel, yellow grapefruit and fresh fennel, accompanied by bay leaf and a subtle spicy nuance. Nothing is exuberant; everything is serene and profound. The palate is surprisingly creamy and unctuous, with a volume that fills the palate without heaviness. The perfectly integrated acidity supports the whole with firmness and balance.
A marked salinity emerges that evokes the Atlantic influence, along with hints of fresh almonds and a slight smoky echo from its natural concentration. The persistence is long and harmonious, leaving a mineral and enveloping sensation. Domaine de L'Ecu Carpe Diem is a wine of character, rich and delicate at the same time, capable of evolving over the years and transforming Melon de Bourgogne into an intense, gastronomic experience.
