Description
Cos Ramí is a unique orange wine from the Sicilian winery Azienda Agricola COS, which has gained recognition for its environmentally friendly approach and its dedication to biodynamic and organic techniques. Founded in 1980 in Vittoria, in the Ragusa region of Sicily, COS was one of the first wineries to adopt biodynamics on the island. The three founders, Giusto Occhipinti, Titta Cilia and Cirino Strano, set out to rescue traditional Sicilian winemaking methods, making wines that faithfully reflect their terroir.
This wine is composed of a blend of Insolia (50%) and Grecanico (50%), two varieties indigenous to Sicily. The vineyards where these grapes come from are located on clay and calcareous soils, which gives a special mineral structure to the wine. The climatic conditions of Sicily, with hot summers and a constant marine influence, contribute to the optimal ripening of these varieties, maintaining their freshness and Mediterranean character.
Winemaking
The production of Cos Ramí follows a very careful process, respecting the principles of minimum intervention. After a manual harvest, the grapes are destemmed and fermented spontaneously in cement tanks with indigenous yeasts, allowing maceration with the skins for approximately seven days. The wine is then aged for several months in these same tanks, where it develops its complexity and distinctive character without losing its freshness. The use of cement instead of steel or wood allows the wine to maintain a pure expression of its grapes and soil, without external interference.
Taste
In terms of taste, Cos Ramí stands out for its remarkable freshness and elegance. On the nose, there are aromas of ripe pear, almond and mineral notes, accompanied by subtle hints of wild flowers and a slightly saline background, evoking the proximity to the Mediterranean Sea. On the palate, the wine is smooth, with a lively acidity that provides structure and balance, as well as a persistent minerality. The finish is long, with an almond aftertaste that invites further tasting.
This wine is ideal to accompany raw fish dishes, seafood or fresh salads, as well as spicy or herbal dishes. The combination of its characteristics makes it an excellent example of the ability of Sicilian wines to offer depth and harmony, all within a framework of respect for nature and local winemaking traditions.
