Description
Clos Lentiscus Sumoll Ferèstec was born as a radical declaration of identity in the limestone heart of the Garraf massif, in the Penedès region. Among poor soils of limestone and reddish clay, under a Mediterranean climate with a strong marine influence, the Sumoll variety finds a vibrant and wild expression. The winery opted to recover this native grape when many considered it too rustic and sharp. That is precisely why they chose it: they did not want a complacent wine, but a biodynamic sparkling wine from the Penedès that would speak unfiltered of the landscape and the Mediterranean forest that surrounds the vineyards.
The vines, worked under strict biodynamic viticulture principles, sink their roots into stony soils that force the plant to work hard. Yields are low and natural acidity is high, ideal for the production of great sparkling wines. The sea breeze cools the nights and preserves the tension that defines the character of Clos Lentiscus Sumoll Ferèstec, today a benchmark among Catalonia's natural sparkling wines.
Winemaking
At Clos Lentiscus Sumoll Ferèstec, the grapes are harvested early and by hand in order to achieve freshness and balance. After a delicate pressing, the must is fermented with indigenous yeasts in neutral tanks. The second fermentation is carried out in the bottle following the traditional method, without the addition of shipping liquor and with minimal intervention. The wine remains in contact with its lees for a minimum of 60 months of ageing in rhyme, developing depth, complexity and a creamy texture without losing tension. There is no make-up or dosage to soften its profile. Disgorgement is carried out with hardly any sulphur added, keeping its energy intact. It expresses itself as a natural, precise and deeply mineral sparkling wine.
Taste
On the nose, Clos Lentiscus Sumoll Ferèstec combines fresh red fruit - sour cherry, wild raspberry - with hints of pomegranate and blood orange peel. The long ageing on lees brings subtle hints of toasted bread, sourdough and raw almonds, always in the background. Notes of Mediterranean scrubland and a chalky background that conveys purity and mineral tension. On the palate, Clos Lentiscus Sumoll Ferèstec is pure electricity. The bubbles are very fine, tense and vibrant, marking a dry, vertical passage. The acidity crosses the palate with surgical precision, supporting a crisp, light fruit. The finish is long, saline and slightly bitter, with herbal echoes that reinforce its untamed character.
