Description

In the heart of the Chablis appellation in Burgundy, Château de Béru is not just a wine estate, but a living legacy. Located in the village of Béru, this château, classified as a historical monument, has witnessed centuries of viticulture. At its entrance, a painted lunar calendar reminds us of the deep connection between astronomical cycles and agricultural work. The history of the vineyard dates back to the 17th century, but was interrupted by phylloxera in the 19th century, which forced all the vines to be uprooted. It was not until 1987 that Éric de Béru decided to replant the first 15 hectares, including the legendary Clos Béru. His daughter, Athénaïs de Béru, took over with a decidedly avant-garde vision: certified biodynamic viticulture, minimal intervention in the cellar, and an unshakeable faith in the power of terroir.

Château de Béru Chablis Montserre, one of the jewels of the estate, comes from an elevated plot of land with four winds, which favours constant ventilation and a unique microclimate. It is surrounded by a hedge of trees that not only acts as a refuge for birds, but also forms part of a virtuous, self-sufficient ecosystem. The soil is impressive: dense layers of limestone overlaid with white pebbles that reflect the light and accentuate the characteristic minerality of the site. Like all Chablis, it is made from 100% Chardonnay, but here it is interpreted in a much more raw, pure and expressive way.

Winemaking

The vinification of Château de Béru Chablis Montserre begins with a completely manual harvest, with meticulous selection in the vineyard. The grapes are carefully transported in small crates to the winery, where they are subjected to a long, progressive pressing that allows the juice to be extracted with extreme gentleness, respecting the integrity of the fruit as much as possible. Fermentation takes place in barrels of different volumes (228, 350 and 400 litres), as well as in vats, always using very little new wood so as not to interfere with the expression of the terroir. Only indigenous yeasts are used , without fining or filtering the wine. Ageing is extended for at least two winters on fine lees, adding complexity, texture and depth without detracting from the tension and purity of the profile of this unique Chablis.

Taste

Château de Béru Chablis Montserre offers a precise and austere nose: notes of chalk, lime, white flower and a slight saline echo. On the palate, the entry is sharp, with vibrant acidity and a markedly chalky texture. The finish is long, dry and saline, with an almost electric energy. A wine that does not embellish, but reveals. A deeply mineral, raw and elegant expression of Chablis.
