Robert Parker's Wine Advocate
Disgorged in February 2019, Lahaye's 2014 Brut Nature Violaine hails from vines on the Bouzy and Tauxières border characterized by shallow soils and south-facing exposition. Offering up aromas of pear, citrus oil, fresh pastry and wet stones, it's medium to full-bodied, charming and pillowy, with racy acids, chalky dry extract and a seamless, elegantly integrated profile. This is another cuvée that was vinified and disgorged without added sulfites.

Winemaking
Fermented with indigenous yeasts and 10 months ageing in oak barrels. Aged for a minimum of 24 months in the bottle before disgorgement. Bottled sulfurours-free.
Description
Benoît Lahaye Violaine Brut Nature champagne is an exquisite blend of 50% Pinot Noir and 50% Chardonnay, coming from the vineyards Les Argentières and Les Monts de Tours, both located in Bouzy. These vineyards are characterised by dry, brown chalky soils.
Winemaking
The first fermentation takes place in used barrels with indigenous yeasts, followed by one or two stirrings of the lees and then complete malolactic fermentation. No racking or filtration is carried out during the ageing process, and no dosage or sulphur is added at any stage of production. It should be noted that only 1,800 bottles of this exclusive wine are produced.
Taste
Benoît Lahaye Violaine Brut Nature is a delicious and seductive wine, with bright, energetic fruit that shows depth and purity of flavour. The soil notes are as intense as the fruit presence, lingering both with multi-dimensional fragrance and length. This exceptional wine unfolds in the glass, revealing new facets as it evolves. It is vividly expressive with notes of pears, lemon oil and exotic fruits. The bubbles are fine and smooth, with incredible energy on the palate and a dry, chalky extract that brings a tannic dimension to the layered, mineralised finish. There are also flavours of green apple and other orchard fruits, yeast, cream, brioche and electric acidity, with a long finish that becomes more complex with time in the glass.
