The serious 2021 Interpretación, his interpretation of Ribera del Duero, was produced with Tinto Fino (a.k.a. Tempranillo) grapes, fermented mostly in stainless steel and some in concrete with indigenous yeasts and matured in 225- and 500-liter French oak barrels, 30% of them new. It's ripe at 15% alcohol but has balance and freshness, reflecting the conditions of the year. It's nuanced, elegant and powerful, with ripe flavors and round, fine-grained tannins. It's a classical Ribera with power and finesse. 37,000 bottles and some larger formats produced. It was bottled in May 2023.

Description
Ausàs Interpretación is a single varietal wine made from 100% Tinto Fino . This wine comes from vineyards located mainly in Pesquera de Duero, Nava de Roa, Gumiel del Mercado, Roa and Moradillo de Roa, at an altitude of 950 metres. The vines are between 35 and 90 years old and are grown on limestone and stony soils.
Winemaking
The grapes are harvested by hand between mid-September and the end of October. The vinifications are made in plots to respect the singularity of each plot, with cold macerations to achieve a greater extraction of fruit. Fermentation is carried out with indigenous yeasts in stainless steel and concrete vats. Ageing lasts 14 months in French oak barrels, 30% of which are new and 50% 500 litre.
Taste
Ausàs Interpretación has an intense cherry colour and an extremely pure and fruity nose, with aromas of Asian spices and chocolate. On the palate, it is a firm and rounded wine, but at the same time elegant, with an unstrident calcic tannin and a silky texture thanks to its fine, chalky tannins. This wine shows a perfect balance between its components, with a well-integrated acidity and a mineral and creamy sensation on the palate.
