I tasted a new bottling of the NV Solera Cream Tía Sabina from October 2021, an old Oloroso mixed with sweet Pedro Ximénez with 18% alcohol and 121 grams of residual sugar. With an average age of 25 years, it's a mahogany-colored and serious sweet wine with notes of caramelized nuts and nougat. The round palate is notably sweet but balanced. 6,000 half bottles produced. The price is for a half bottle.

Alvear Solera Cream Tía Sabina is a fortified wine of exceptional quality, produced in the prestigious region of Montilla-Moriles. This wine is a sublime example of the Spanish winemaking tradition, standing out for its unique elaboration and ageing.

Winemaking

Alvear Solera Cream Tía Sabina is made from 100% Pedro Ximénez grapes, a variety that gives it a distinctive character and enviable complexity. The ageing of this wine is a meticulous and lengthy process. It is aged in American oak casks, using the traditional system of criaderas and soleras. This method involves periodic sacas and decantations, which contribute to its unique flavour profile. The Alvear Solera Cream Tía Sabina reaches an average age of more than twenty years, a period during which sweet Pedro Ximénez wine is added to the oloroso solera Asunción. Both wines are aged together for at least three more years, resulting in one of the most elegant Cream wines on the market.

Taste

Alvear Solera Cream Tía Sabina is an unforgettable sensory experience. It is characterised by a perfect balance between the sweetness of the Pedro Ximénez and the nutty character of the oloroso. On the nose, it has a powerful, deep and pungent aroma, with notes of fine woods, dried fruits, caramel and orange peel. On the palate, it is elegant and silky, with a very long and persistent finish. This wine has a bright amber-gold colour, which invites to be tasted.
Alvear Solera Cream Tía Sabina is ideal to enjoy on its own at the end of a meal or to accompany pâtés, sweets, light pastries, coffee or nuts. Its optimal serving temperature is between 13-15 °C, allowing its richness and complexity to be fully appreciated. With an alcohol content of 18%, this wine is a testament to the art of winemaking and a true jewel of Montilla-Moriles.
