Description
The Almirez story begins in the heart of the Toro D.O., an extreme and solar land where Tempranillo, here called Tinta de Toro, has taken root since pre-phylloxera times. It is in this harsh and powerful region where Marcos Eguren, the restless soul of the Eguren family(San Vicente, Sierra Cantabria), decided to start a new stage after his successful career in Rioja. The challenge was enormous: to tame the wild power of Toro without renouncing its character, but taking it to a more refined, elegant and expressive dimension.
Thus Teso La Monja was born, an almost mystical project that breathes respect for the land and for the old goblet-trained vineyards, many of them planted on ungrafted vines. Almirez 's idea was clear from the beginning: to offer a wine that represents the soul of Toro, but which is also accessible, silky, full of intention. The vines from which they come, some more than 40 years old, grow on poor, sandy soils with shallow gravel, under an extreme continental climate, where the temperature contrasts between day and night are brutal. A harsh environment, which forces the vines to go deep, to struggle, to concentrate. And it is this struggle that translates into each glass of Almirez : character, density and purity.
Winemaking
The grapes are harvested by hand, in small boxes, selecting clusters in the vineyard and again in the winery. Fermentation starts spontaneously, with indigenous yeasts, in stainless steel tanks with gentle pumping over so as not to over-extract. The maceration is prolonged just enough to preserve the fruit and the silky tactile sensations that Marcos Eguren is looking for. Subsequently, Almirez is aged for 12 months in French oak barrels, approximately 30% of which are new. The rest, second use, adds structure without overshadowing the freshness or the varietal identity. Bottling is done without aggressive filtering, allowing the wine to keep its soul intact, its lively texture.
Taste
Almirez does not impose itself, it insinuates itself. On the nose, it displays ripe but not candied black fruit: black plum, blackberry, a hint of redcurrant. All enveloped in a spicy veil reminiscent of clove, freshly ground black pepper, with traces of bitter cocoa and liquorice. There is a background of warm earth, of dry undergrowth, as if one were treading on the roots of Toro in the middle of summer.
The palate is full but measured. It enters sweetly, with that polished but present tannin, enveloping like velvet. The acidity, surprisingly lively for this area, lengthens the passage and refreshes the whole, making it more gastronomic than expected. Notes of roasted coffee, light balsamic notes, an almost sanguine minerality reminiscent of iron and hot stone after a storm. The finish is long, serious, with that echo of black fruit and sweet spices that invite another sip.
Almirez is a Toro that has been tamed but not domesticated. A wine that pays homage to the strength of its land but channels it intelligently. Ideal for stews, game, roasts and slow conversations. A wine that does not seek to dazzle at the first sip, but that conquers with its balance between power and finesse.
