The city of Jerez de la Frontera, placed in the centre of the Cádiz region, has given its name to the celebrated Jerez wines. However, the appellation Jerez and Manzanilla de Sanlúcar de Barrameda includes towns from Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda, referred as “Jerez triangle”. Between the coasts washed by the Atlantic ocean and the rivers Guadalquivir and Guadalete, 12.000 hectares of grapevines are extended on the undulate lands of white limestone soils, the renowned “albarizas”, porous, very deep lands with excellent water retention capacity and unbeatable conditions for vineyard growing. The southern climate is balanced by the Atlantic influences, producing mild summers and winters; the nearby sea renders high humidity, important annual rainfalls which stands out with a remarkable sunlight hours.
The predominant grape variety is Palomino Fino, which represents almost 90% of the production. The other varieties are Pedro Ximénez and Moscatel. Classical fortified wines elaborated at DO Jerez are: manzanillas, finos, amontillados, palo cortado, olorosos, creams, Pedro Ximénez and Moscatel. Here the traditional system for ageing wines is called “Criaderas” and “Solera”. The mentioned “Solera” technique is a dynamic process where wines at different aging stages are blended together to keep the features of the wine. The minimum ageing period is three years, so there is firstly a biological ageing and later on an oxidative ageing.
