The top-of-the-range red 2018 El Veneno is 100% Monastrell produced with a lighter hand. It fermented with some 30% of stems and uncrushed grapes with indigenous yeasts in a barrel box (a square vat made of wood!) with a very soft maceration, almost an infusion. The wine matured in neutral 500-liter oak barrels for one year. This comes from the vine in the higher part of a vineyard Mendoza bought when he started the project. This is varietal but an elegant expression of the grape, with notes of the Mediterranean herbs (rosemary, pine needles, lavender...) but with a more delicate palate, with fine-grained, chalky tannin and a dry finish. This is outstanding and transcends the quality of the vintage. It should age beautifully. 9,500 bottles were filled in February 2020.
Between 16ºC and 18ºC
Fermented with indigenous yeasts and stems (30%) in an oak tank. Aged for 12 months in neutral 500 litre oak barrels.
