There is a subtle difference in the latest bottling (L 2/15) of the NV Palo Cortado VORS, as they have integrated a new solera of older wine with the existing one, so the average age, concentration and power of the wine has increased. Whether more is better still remains to be seen; I would really need to taste them side by side to see if there are subtle differences, but in any case, the quality is (as it was) extremely high, with notes of old wine, noble wood, varnish, hazelnuts and pungent aromas; I didn't really see the cremosity I often associate with Palo Cortado, but it has more the sharper character of an Amontillado. The palate is terribly balanced, intense, long and sapid. It has some saline reminiscences that reminded me of an amontillado too. This is a bottling of 2,150 bottles; there's usually one bottling per year.

Description
Bodegas Tradición was founded in 1998 with a clear mission: to rescue the lost greatness of classic Jerez. Joaquín Rivero, its founder, decided to focus on old wines, of very limited production, without concessions to modernity or the market. A brave decision: to buy old forgotten soleras and bring them back to life. His Palo Cortado Tradición V.O.R.S., made exclusively with Palomino Fino, is the rarest wine of the house, a reflection of this purist philosophy that honours the land and the memory. Aged in Jerez, in albariza soils and under a climate that alternates extremes - Atlantic breezes, relentless sunshine - this wine ages in the heart of one of Europe's oldest appellations.
Winemaking
Palo Cortado Tradición V.O.R.S. combines initial biological ageing -under flor veil- with prolonged oxidative ageing in old American oak casks. With an average certified age of over 30 years(V.O.R.S. ), this wine is made using the traditional system of criaderas and soleras. Each step, from racking to bottling, is carried out manually, without fining or filtering, thus preserving all its purity and complexity. Only 2,000 bottles are produced each year, which adds even more exclusivity to this liquid treasure.
Taste
On the nose, Palo Cortado Tradición V.O.R.S. is deep and sharp: bitter almond, walnut, orange peel, noble woods and a salinity that evokes a sea breeze. There are also notes of nougat, eucalyptus, toffee and mild spices. On the palate, the wine enters silky, enveloping, with a vibrant acidity that balances its density. The texture is firm, with echoes of toasted nuts, salted caramel and a long, dry, elegantly bitter, almost eternal finish. The minerality of the albariza is felt in every sip, as is the patina of time. A palo cortado with a precise structure, austere and noble, which speaks softly but leaves an indelible mark. Ideal to drink on its own or to accompany dishes with umami, such as cured cheeses, mushrooms or Asian cuisine with depth.
